Sunday, is first day of our week, sometimes after a long/late weekend i jus miss my routine wake up time. I need pack breakfast for my kiddo, breakfast and lunch for my bro & hubby. This Carrot rice helps me a lot in those times.
Got up late, Lil time to pack lunch for your kids/hubby/for you. Hope you all have a cooker/oven, jus cook rice and a easy simple carrot rice comes below.Hope this helps u too.
Ingredients
Carrots - 1 medium-sized, finely shredded
Rice - 1 cup, cooked
Green Chillie - 2 nos
Ginger paste - 1 tsp
Curry leaves - 1 sprig
Salt to taste
Coriander for Garnishing
Seasoning
Oil/Ghee - 1 tbsp
Mustard seeds - 1 tsp
chana dal - 1 tsp
hing - a pinch
Method
Heat oil in a kadai, splutter mustard seeds, add hing, green chilli. curry leaves, ginger paste, add chana dal. Let it roast golden brown. now add the shredded carrots and toast it for a minute or two. Normally i use the carrots without cooking, but it is said that carrots should be cooked atleast a minute or two for them to release those goodies it has. so, i cook it these days.
Take it off the flame and add it to the rice and mix well. Check the salt. Garnish with coriander and jus add a dash of pepper before serving.
If you are packing it for kids, try grinding chillies, ginger, curry leaves and coriander to a coarse paste and add while seasoning. yeah, I know, Kids!!!!!!!!!!!!
